Sourced from En Shi City in Hubei province, this tea is processed by Chinese Ethnic Minority using the traditional steam method, making it truly unique. The steaming process deactivates the enzymes in the tea leaves, resulting in a special color and flavor profile that is unrivaled by other green teas. Each sip is a delightful combination of freshness and smoothness, with a hint of chestnut and a subtle vegetal note. To brew this exquisite tea, we recommend using the Chinese Gongfu Method or the Cup Method.
The Gongfu Method involves using a Gaiwan and steeping 5g of tea in 150ml of 185℉ / 85℃ water for 4 steeps: a quick rinse, followed by steeping for 30s, 40s, 60s, and 80s. The Cup Method involves steeping 3g of tea in a 12oz / 355ml teacup with water at the same temperature for 2-4 minutes.
