- The Tojiro Reppu series of Japanese knives elegantly combines modern powder metallurgy with its SG2 steel and a minimalist design featuring an octagonal handle made of teak wood. This knife is very thin, lightweight and extremely sharp. Tojiro's fit and finish is superb and consistent. The kiritsuke tip makes intricate cutting easier, while giving the knife a more aggressive appearance. Handcrafted in Tsubame, Japan. Although Tojiro labels this knife as a kiritsuke, this knife's blade profile is traditionally referred to as a bunka knife. Think of a more compact, taller chef's knife shape with the kiritsuke tip for very fine cutting. The bunka is a multi-purpose tool for preparing meat, fish and vegetables. The slight curvature of the blade allows for easy maneuverability whether using vertical chopping motion, draw slice or rocking mince.
